Chewy Oatmeal Cookies


oatmeal_cookies_stackIt is fall and one of my fall favorites are oatmeal cookies. This is a nice easy and chewy recipe. I divided the dough into three and added raisins into one, dates into the other and chocolate chunks into the third.

Yield: 5 doz

1 cup sugar
1 cup firmly packed brown sugar
1 cup lard or shortening
2 eggs
1 teaspoon Vanilla extract
3 cups old-fashioned oatmeal
2 cups sifted all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
Raisin, dates and chocolate chips are optional

Preheat the oven to 350°F. In a bowl, cream the sugars thoroughly with the lard or shortening until the mixture is light and fluffy. Beat in the eggs until light. Add the vanilla extract and stir. Stir in the oatmeal. In a separate bowl, mix together the flour. salt, and baking soda. Work the dry ingredients into the oatmeal mixture. Drop by teaspoon, spaced apart, onto cookie sheets. Bake for 10 to 12 minutes, until the center is soft to the touch and the top and edges are golden to light brown in color. Allow cookies to cool for 5 minutes before removing to wire racks to cool completely.
